Fostering a Cane Corso

Hello all,
I am a volunteer for a great dane rescue group, but we saw a cane corso at animal control services and had to get him. He was scheduled to be put down the next morning. He was severely emaciated, has kennel cough and several recent bite marks on his legs, neck and head. We named him Coco. It has been 2 1/2 weeks and he is feeling good and putting weight on. He gets along with our 8 yo male great dane. Not sure about his age because he is small and his permanent teeth are chipped and worn but little tarter build up. Vet thinks 3 yo. He is still intact. We will have him neutered when he has put on more weight and is 100%. We are starting to fall in love. Only drawback...in the last week he is paying attention to the cat and zones in. He has gone after her twice. The first time while I was holding her, he started to bark and raced up to us. He went to nip at her and I put my arm between them. He bruised me but did not break skin. The second time Missy, my cat, came out of the washroom while we were in the kitchen. The boys, Coco and Drake, were hanging out in the room off the kitchen watching us.  We didn't realize Missy came out, but Coco zoomed over and cornered/pinned her under the kitchen table/chairs. I trade to call off Coco. He did not stop. I tried pulling him off and was not at a good angle. I got down next to him and wrapped my arms around him to pull back. I put my arm between them again. Missy did not get hurt. Her fur was not even damp, so we don't know that he put her in his mouth. Is there anyway to train him not to pay attention to Missy?  I ask because we would keep him. Otherwise we have to find him another foster while finding his permanent home.  Thanks for the input.
